Mixed Vegetables and Mushroom Stir Fry

As someone who loves pre-made food, having healthy options readily available in my fridge is a lifesaver, especially on busy workdays or when I'm too tired to cook. Prepping meals on the weekend makes it easy to stick to healthy choices throughout the week. This easy stir fry recipe is perfect for quick, delicious, and healthy meals. It's versatile enough to be added to breakfast dishes or tacos—the possibilities are endless. Plus, I substitute regular spices for store-bought taco mix to avoid the high sodium content.

Ingredients:

  • 10-15 mushrooms, chopped

  • 1/2 onion, chopped

  • 1 bell pepper, chopped

  • Spinach, carrots, corn, or any other vegetables readily available

  • 2 cloves garlic, minced

  • 1 chopped jalapeño or green chili

  • 1/2 tbsp olive oil

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp red chili powder

  • Chopped cilantro

  • 1/2 lemon

Instructions:

  1. Heat the olive oil in a pan and add the chopped onions and minced garlic. Sauté for a few minutes until fragrant.

  2. Add the chopped mushrooms and other vegetables to the pan.

  3. Sprinkle in the salt and spices (turmeric powder, coriander powder, red chili powder).

  4. Cover the pan and let the vegetables cook until tender.

  5. Garnish with chopped cilantro and squeeze the juice of half a lemon over the top before serving.

I love this stir fry on toasted sourdough bread with a tablespoon of cottage cheese, and I also like to add avocado for extra creaminess. Enjoy this versatile, healthy dish any time of the day!
