Chickpea Flour Chilla: Plant-Based Vegetable Indian Omelette/Pancake
Chickpea flour, or besan chilla, is my favorite breakfast. I love adding different vegetables to this simple yet healthy recipe. This protein-rich breakfast is a quick fix on busy mornings and offers endless creative possibilities. You can make this with chickpea flour or any flour of your choice, but I love the nutty taste of besan. Adding chopped onions, tomatoes, and other vegetables gives it an egg omelette vibe. It tastes amazing with toasted bread.
Ingredients (Serves 2):
1/2 cup chickpea flour
1 tsp red chili powder
1 tsp turmeric powder
1 tsp carom seeds (ajwain)
Salt to taste
Handful of cilantro, chopped
1/2 onion, chopped
1/2 tomato, chopped
Handful of spinach, chopped
1/2 bell pepper, chopped
1/2 carrot, grated
Instructions:
Mix all the vegetables with the chickpea flour in a bowl.
Add water gradually to make a batter that is not too thin or too thick.
Heat 1 tsp of oil in a pan.
Pour the batter onto the pan using a spoon, spreading it out evenly.
Cook until the edges start to lift and the bottom is golden brown, then flip and cook the other side.
